Original text of the recipe:
“Proportions: 6 eggs, 100 grams of sugar, 30 grams of flour, 40 grams of butter, ½ lemon
Divide whites, mix whites with sugar and lemon ½ hour. Add melted butter and cold flour, mix delicately. Grease the bottom and the edges of a pike and shed the composition inside. Put in the oven until it is baking and gets a nearly brown golden color. Roll on a plate or a frying plate, spread a layer of jam or marmalade and run. Sprinkle with sugar and serve cold in small slices. ”
6 pieces of eggs
100 g of sugar
30 g flour
40 g butter
1/2 lemon
a little salt
a few tablespoons of marmalade / jam or jam paste
a little sugar powder
Separate yellow whites
With the help of a mixer, whisk the whites together with a little salt, the sugar and the bark half a lemon
Add melted butter and cold and flour to the whites
Lubricate an oven tray with oil
Place the composition in a thin layer tray (about 1 cm) and bring it to the oven
The composition is ready when it is beautifully browned (golden to brown)
Remove the omelet from the oven and overlay it on a heat-resistant board
Grease omeleta with marmalade (jam / jam paste) on all its surface
It runs smoothly and stays on a plateau

Serve cold, sliced
If not specified in the recipe, I chose to add some salt to the whites.
The recipe does not mention the type of marmalade / jam so I chose to put a plum jam that I made the fine paste with a mixer.
Omelet (countertop) runs very well, is very flexible but also very tasty. A recipe very easy to do and very good. A super quick and dessert at hand.
